It's about consumer trends and consumer demographics (not trends in consumption and demographics).

i.e. how consumption is changing, and who the consumers are, demographically speaking.

There shouldn't be any significant difference between chilean and castilliand spanish in this respect. However, the main point is that it is about consumer demographics, not trends in demographics (as proposed above).
