"Nel vitivinicolo assume grande importanza il ruolo della vasca di accumulo, come polmone per affrontare i periodi della vendemmia."
I've seen a couple of Kudoz questions for this sector with "polmone" used in combination with other words, but I can't really piece together what they are trying to say with it in this context. Any connoisseurs out there?

temporary reservoir
The vasca di accumulo (waste storage tank) holds the waste liquids for the time being, allowing producers to focus on wine production; the wste can then be dealt with when they have more time on their hands, after harvest.
The polmone, then, is obviously metaphoric. Something like "temporary reservoir" gives the idea. It's a "polmone" because it gives you "breathing space"; at least that's how I read it

: I do not think this will carry the full purpose of a "Lung", if this is metaphorical.

And then just some marketing copy about the company's experience.
