I've seen a couple of Kudoz questions for this sector with "polmone" used in combination with other words, but I can't really piece together what they are trying to say with it in this context. Any connoisseurs out there?

I see what you're saying, Lara, and I think you have a point, but I get the impression that the writer probably isn't an expert on physiology. If so, they would not say that a "vasca di accumulo" is comparable to a lung at all; it isn't. A "vasca di accumulo" in wine production is not used to filter out waste as such, but to store it temporarily, hence my suggested translation. Having said that, it's just a suggestion based on my knowledge of the process; I think it works but admit that I don't know if there is a specific term

Lung I think this is also making reference to the fact that the human lung filters out what it does not need (i.e. it's purpose is to absorb the oxygen in the outside air). Could this be connected in his case to the purification described here?

As requested Before this is just the title (Wastewater from the wine industry), and after it is "Forte della sua esperienza, maturata negli oltre 15 anni di attività, XXX è diventato punto di riferimento per quanto riguarda la depurazione dei reflui da industria vitivinicola."

And then just some marketing copy about the company's experience.

temporary reservoir

The vasca di accumulo (waste storage tank) holds the waste liquids for the time being, allowing producers to focus on wine production; the wste can then be dealt with when they have more time on their hands, after harvest.

The polmone, then, is obviously metaphoric. Something like "temporary reservoir" gives the idea. It's a "polmone" because it gives you "breathing space"; at least that's how I read it
