in the finish
I believe this simply means "in the finish".
"Finish" and "aftertaste" are so closely related that "aftertaste" can be omitted in the translation (tautology).

Examples:
Like the dry apple core and lemon pith acidity and a definite sense of shimmering minerality in the finish.

Reserva 2001:
From vineyards 40 to 50-years-old. Strawberry nose with a strong dead leaf/earthy background not unlike a Pinot Noir, but with a different mouthfeel and structure. Good minerality and light oak in the finish. 91 points.

Lovely filigree Riesling with flavors of stonefruits, tangrine peel, lilac, anise and in the finish a remarkable slate minerality.

The palate is dry, with an orangy note to the fruit, with some waxy, smoky edges and that big, pithy minerality in the finish that is dry and mouth-watering ...

2002 Christian Moreau Chablis Clos
Light yellow gold color; some pear and sweet basil aromas; this is a more forward wine than the others in the flight and it exhibits some apple tones and shows the markers of the early stage of maturity in terms of some very light toast flavors; apple pastry and some modest minerality in the finish. Nice but probably at its peak. (No votes). 92
