I prefer: the body of the wine is per-ceived .... because body already implies the presence of "spessore".
Direct translation of archetti is BOWS but I believe that in this context, one should talk of RINGS.

thanks. I am note sure because we are here certainly referring to that known "swivelly turning" of a wine glass before smelling or tasting - and the obvious thing that results are: rings.
