This is from an Italian olive oil guide. Description of an olive oil followed by examples of dishes that the oil will accompany/enhance etc. The full sentence reads:- "Ideale sulle friselle al tonno con cipolle di Tropea o per impreziosire una zuppa di legumi".

"Friselle" is the term I am seeking - is it a sort of bread or crispbread?

Tuna friselle

I'd leave it as friselle as it's the name of a type of Pugliese bread which is a thick, hard crispbread
