Buongiorno a tutti,
qualcuno di voi sa come si chiama in gergo la carta paglia? Ho provato a cercarla sui dizionari senza però trovare alcun indizio. Credo sia quella carta assorbente su cui si mettono le fritture e spesso, come nel mio caso, il cibo al ristorante viene presentati proprio sopra un foglio di questa carta, oltre al piatto s'intende!

Se vi può servire vi riporto la frase in questione:
"Presentazione del piatto: porre la mozzarella in carrozza ben calda sopra un foglio di carta paglia"

agree Caterina Rebecchi : Sì. E' marroncina ed è più elegante (imho) della carta assorbente. Per un'immagine:http://www.velincart.it/tablecloths_paper.htm/Hai ragione può essere di colori diversi. Al ristorante, però, l'ho sempre trovata marrone :)

Thanks Caterina. I suspect it can be bleached white (and then dyed any colour).
agree stefania da prato : E' sempre di colore marrone poiché é carta riciclata, molto rustica. Di solito viene utilizzata come coprivassoio o tovaglia ma non dovrebbe essere utilizzata direttamente a contatto con gli alimenti in quanto, appunto, é riciclata..

neutral Angela Arnone : E' "cartasùga", non carta paglia. Si usa per asciugare inchiostro non cibo - ma devi avere una certa età per distinguere ... sei troppo giovane!

Carta paglia

� chiamata anche carta da macellai: viene utilizzata per avvolgere alimenti quali la carne ed il pollame. Si impiega quasi sempre con la carta oleata. � fabbricata con la paglia di grano e si riconosce per il caratteristico colore giallo e per lo spessore consistente. Tende ad essere sostituita da apposita carta per alimenti con una faccia plastificata.

neutral Angela Arnone : That's like kitchen roll - "carta paglia" is made from wheat straw, not from pulp so it's different. Also Maura is talking about serving: you wouldn't serve on kitchen roll ... I agree that "straw paper" isn't a common term in English though

no, I realise that - but surely it would have to be food grade quality, and I just mean I'm not sure that it's generally known about or available...
neutral Robert Tucker (X) : "Straw paper" items are probably very hard to find in UK stores and any would almost certainly be imported. The UK is a very low producer/user of straw paper – Italy is more advanced with straw-pulp paper, (almost) making it strong enough for newsprint.
