I am puzzled about the meaning of the first part of the sentence - I do not understand what "penjamin" in this sentence refers to. Would you please help me?

"...that as a guarantee of debt settlement of the debtor amounting to/an amount of money that will be specified..."

There is a highly possibility of typo: instead of penjamin, we should have menjamin. The text will then look flowing and logical.

Surely, legal texts are usually checked more rigorously, but mistakes happen. And it happened here, IMO.

An alternative of the above is:

...that to guarantee settlement of the debt amounting to by the Debtor ...

However, the above is the most loyal translation of the source, and loyalty is paramount for legal text translation.

If it is followed by a figure (e.g. sejumlah USD 10.000), then the translation is amounting to USD 10,000).

However, sejumlah uang just means an amount of money.

Thank you for your help. Indeed, I thought that "menjamin" would be a more suitable expression for this sentence. So you thing that the expression "sejumlah" refers to the actual debt? What about the second part of the sentence (/sejumlah uang yang....)? I am still confused about the meaning of this sentence as a whole. Would you please help me once more? thank you.
