I believe in this context it HAS to be 'welding' --- two parts are fused together by the heat generated by the u.s. vibrations
'Sealing' would be more appropriate if talking about bag closures for example, if this is appropriate for your context.
'Soldering' implies an entirely different technique, which as far as I am aware (though I'm not a specialist!) is not applied in the plastics industry; as I understand it, soldering specifically implies the addition of some other material (tin/lead alloy, for example) that is melted and alloys with the surface of the components to be joined, rather than welding, where (in metallic terms) the same or similar metal is used; in plastic terms, welding is more akin to 'fusing', where no material is added (as in glueing or cementing), but the material itself is melted or fused together.
I believe this information is correct from my own personal engineering experience, but no doubt someone can correct me on specific points.

From what I can see, \'ultrasonic soldering\' sems to be a completely different technique, using ultrasound to provide the heating for \'conventional\' [metallic] soldering --- doesn\'t appear to have much to do with plastics, as far as I can ascertain
