Grand Dictionnaire suggests enrollments in the context of insurance but I'm not convinced. Normally I'd rewrite the sentence to make it something like the "taking out of the policy" but as "adhésion" is a key term I can't do that here. I need a countable noun that would work.

From a "contrat d'assurance collectif"
Examples:
"L’Assureur a confié à Société X, qui agit en qualité de co-courtier aux côtés de Société Y, un mandat de gestion (ci-après dénommé le « Mandat de Gestion ») au titre duquel X effectue, pour le compte de l'Assureur, la gestion des Adhésions et des sinistres, et l'encaissement des cotisations en relation avec le Contrat d'Assurance Collectif."

"Ledit transfert sera échelonné sur une période de douze (12) mois. Le nouveau gestionnaire reprendra chaque début de mois, la gestion de l’ensemble des Adhésions au Contrat d’Assurance Collectif dont la date anniversaire de l’Adhésion correspond audit mois de reprise de gestion."

Could I put "taking out of policies" for plural and "taking out of policy" when singular?

If you take out an insurance policy with a company, aren't you then a member ? Not 100% sur about this, I may be thinking of "mutuelle" style cover.

attachments (OR individual policies)

When I worked in insurance broking in the UK, "attachment" would be the word used each time that a new insured is added to a group insurance policy. The inception date of each insured's cover would be different within the period of the group policy and each individual cover would normally run for a period of 12 months, provided that the respective inception date fell within the period of the group policy.

So, I would say "attachments under the group insurance policy", but you might prefer to use "individual policies", in which case, it would probably be advisable to say "group insurance contract" (rather than "group insurance policy") to avoid any confusion between the two.

Why avoid the word? This is about a group insurance policy. The underwriting is done at the level of the company or group. If they are not enrolled automatically, individual members of the group sign up ("subscribe") by filling out an enrolment form.
