: Absolutely, see Mastering the Art of French Cooking, for instance. One of my favorite dishes since I was very young! Though I am assuming that that accent is meant to be over the "a" not in front of it?

: This is not a Greek dish, it is a French dish of vegetables cooked in a coiurt bouillon which is then reduced severely and poured over the cooked vegetables as a marinade, after which they are served cold.
