We're in TMA (tierce maintenance applicative - facilities management or application management outsourcing) for a call for bids - the response involves the IT provider implementing to schedule, with a transition phase followed by "réversibilité" and set out in the "plan de réversibilité". I know what's going on, but i don't feel that straight 'reversibility' is the right answer: there must be some snappy term involving legacy turnaround, switchback/fallback, or whatever, no?

When talking about software, we typically say "rollback" (n) or "roll back" (v). Ex. "We had to roll back the release because customers could no longer log in."

When talking about hardware, "fallback" (which you mention) is a good option. Ex. "a fallback server"
