nitrate-trapping crops
I've come across a small bit in a translation which is way too technical for me. It is to do with nitrate-trapping crops used with a view to reducing levels of agricultural pollution ending up in water. What I need to understand here is exactly what is being 'adjusted' - the 'apports azotés' - nitrogen intake?
L’opération se réalise en ajustant les apports azotés aux cultures, en tenant compte de leurs besoins et des fournitures du sol en azote et en piégeant l’azote résiduel d’une culture par l’intermédiaire de cultures pièges à nitrates (CIPAN).

With the help of the Ontario Research Enhancement Program (OREP), an AAFC funding program that encourages partnerships between university, industry and government researchers, they’re setting their sights on the greatest single cost facing today’s corn producers: ***nitrogen supplementation of soil***.
Climatic conditions can profoundly affect the amount of nitrogen naturally produced in soil and the amount a corn plant needs. By accurately defining these changes, the researchers hope to give farmers an accurate estimate of how much nitrogen fertilizer they need to maximize their output and minimize the negative effects of excess fertilizer on the environment.

Comment: "This was a tough one to grade - it was a toss-up between the first answer (input) and this one... in the end I plumped for this one...which makes sense to me (so did the other one...!)...thanks to all. "

nitrogen input
'intake' would be for an organism, so I'd go with 'input'

uptake
This is the term used to refer to the way a plant traps nitrogen. When you put nitrogen on crops - add it - the thing you measure is effective uptake. But here it looks the other way around. They're trying to find something to uptake nitrogen to reverse the biological death of wetlands, which occurs when plants have too much nitrogen (and not enough oxygen).

: No it's about adjusting the amount of nitrogen you add to suit the crops' needs and the amount of nitrogen already there.

NFG remark
I think the grammar and punctuation of the sentence are a bit misleading. I would read it as follows:
L’opération se réalise en
(1) ajustant les apports azotés aux cultures, en tenant compte de leurs besoins et des fournitures du sol en azote, et
(2) piégeant l’azote résiduel d’une culture par l’intermédiaire de cultures pièges à nitrates (CIPAN).

How about "matching the amount of nitrogen added to crop requirements and the supply of nitrogen in the soil"?
