It all depends whether the author is referring to spiritual sheperds or something more literal or prosaic.

shepherds

you can omit 'uomini' in the translation. Use simply 'shepherds'

This way you could have both words included, the first "shepherd" being the second's adjective ("men"), which seems what the author suggests in Italian.

Obviously shepherds are shepherds without further explanation but if in Italian the author wrote "uomini pastori" there must be a reason (it certainly sounds more poetic), so putting both words together, in my opinion, gives a better idea.
